Breakfast this morning had eggs available 2 potatos from mom's garden by the way, tomatos and onion (same source) 2 frankfurters and milk. I grate the potato (making sure its in water so it doesnt oxidise and become black and yucky) Grated the tomato and chopped an onion and sliced the frankfurters...I combined all of this with the eggs with 2 knobs of butter and put it into a preheated oven and baked for 30 minutes at 200...i am sure you have noticed that this would have been so awesome with cheese...This little nugget is thanks to Kierran who used to prepare this tasty little dish for us when we were in Botswana...hope you enjoy it
